| I don't know alot about driving a race car, but why do they press the gas and the brake at the same time? is this done to keep the revs up while going around a corner? |

It's called left foot braking.. it stabilizes the car around a corner. |

I haven't seen the video.
But maybe they are heel toe-ing?
Where you brake with the toe, and blip the throttle with the heel to rev match when down shifting, to make a smoother transition into the lower gear. |

What you described is called "Heel-Toe" or "Heel-Toe Downshift"
It allows you to essentially do two things at once (brake and downshift) that way you can squeeze out that last bit of speed & time in your lap/run
Unless it's done well, heel-toe downshifts don't bring about a smoother downshift.
It takes practice to get it right and I've heard of many fast drivers that don't heel-toe |

It's also very, very hard to learn on the street.
Usually when you're heel-toeing, you're pounding on the brakes and don't really have to worry about it. You're then free to rotate your foot around.
Doing this on the street, using light pedal pressure, is quite difficult. |

| But its still a good thing to try and teach your self. The real advantage of a heal toe downshift is that it can be done while braking and turning the car and still keep it balanced. |
