Is there any reason I shouldn't set the stock turbos to the same boost? Wouldn't this change the 10-8-10 pattern to 10-10-10, reducing the annoying transition? Thanks.

No you can't change the transition. Read up on how the sequential system works and then you will understand the boost drop.
