I am looking for Arborio rice. Superstore and Sobey's do not have it. Anyone know where I can find Arborio rice? I want to take a crack at making Risotto. Will I find it in Little Italy you think?

probably the biggest thing is to make sure to not over cook or it gets too mushy. and make sure its served immediately after its baked.

I cook Risotto all the time.
They have Arborio at Safeway. The one I buy is in a clear zip type bag with green letters.

Chicken, asparagus, and shitake mushroom risotto is sooooo good.
Remember the fresh Parmesan cheese

oh also... I find that it tastes better if you are heating the broth before adding it to be reduced. Reduce your broth/ wine slowly too.... it takes time to make good risotto.... the good news is that you can drink the bottle as you cook. :D

I find it doesn't affect the taste significantly if you use expensive wine or not either....

I get my Arborio at Safeway in a little green package.

Add in the cold butter/parm cheese at the end, it's referred to as mantecatura (do a google search), and it's what gives the great taste at the end. This is what the real secret is to risotto.

Well I did a risotto tonight that I haven't done before.
Used roasted butternut squash.... and was it ever good. yum

I have found the best risotto can be bought at the Bosch store on 51 ave. It is very inexpensive there compared to Safeway. Try adding dried mushrooms (Planet organic) and spinach!
